Secca,&lt;br /&gt;&lt;br /&gt;Rubacuori Rosso Passito&lt;br /&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div align="center"&gt; &lt;/div&gt;&lt;div align="center"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;br /&gt;&lt;strong&gt;SALE DI CERVIA&lt;br /&gt;&lt;/strong&gt;A cosa deve la sua fama il sale di Cervia e cosa significa “sale dolce”? &lt;/div&gt;&lt;div align="center"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div align="center"&gt;Per produrre sale marino sono necessari quattro elementi:&lt;br /&gt;acqua di mare, sole, vento e sapiente opera dell’uomo.&lt;br /&gt;A Cervia i salinari hanno dovuto affinare un metodo di produzione&lt;br /&gt;del sale che tenesse conto delle particolari condizioni climatiche&lt;br /&gt;dell’Alto Adriatico, meno caldo e più piovoso di quelle del Mediterraneo.&lt;br /&gt;La raccolta tradizionale a raccolta multipla avveniva ogni giorno&lt;br /&gt;per settori e in cinque giorni si esauriva il contenuto di un intero&lt;br /&gt;settore. La settimana successiva ricominciava dalla raccolta&lt;br /&gt;del sale del primo settore che nel frattempo, se non era piovuto,&lt;br /&gt;si era riformato e depositato.&lt;br /&gt;Questo metodo, mosso da evidenti ragioni di sfruttare al meglio&lt;br /&gt;la deposizione del sale in queste particolari condizioni climatiche,&lt;br /&gt;aveva come conseguenza un pregio: il sale risultava migliore,&lt;br /&gt;dal gusto più delicato, non era amaro. Da questo apprezzamento&lt;br /&gt;culinario nacque la fama di “sale dolce” che lo accompagna&lt;br /&gt;ancora oggi. La ragione di tale caratteristica era dovuta dal&lt;br /&gt;fatto che durante la raccolta continua si riduceva al minimo la&lt;br /&gt;formazione e il deposito di Sali amari come solfati e cloruri di&lt;br /&gt;magnesio e potassio.&lt;br /&gt;Tutto il sale di Cervia è un sale marino integrale che mantiene&lt;br /&gt;la sua naturale umidità dal 2 al 4%; non viene raffinato né&lt;br /&gt;essiccato artificialmente e nemmeno addizionato con antiaggreganti,&lt;br /&gt;e pertanto conserva gli oligoelementi marini ed è&lt;br /&gt;molto solubile.&lt;/div&gt;&lt;div align="center"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;/div&gt;&lt;img style="TEXT-ALIGN: center; A seguito probabilmente di periodici allagamenti&lt;br /&gt;di acqua marina nei terreni retrodunali l’evaporazione&lt;br /&gt;formava estese incrostazioni di sale. Unitamente alle funzioni&lt;br /&gt;produttive le acque della salina hanno attirato sin dall’antichità&lt;br /&gt;l’attenzione dell’uomo per le loro proprietà terapeutiche. Oggi&lt;br /&gt;con le famose "Acque Madri" o "Acque Rosse " delle saline si&lt;br /&gt;praticano cure nello stabilimento termale di Margherita di&lt;br /&gt;Savoia.&lt;br /&gt;SALE DI TRAPANI&lt;br /&gt;Il sale marino artigianale di Trapani sala di più rispetto agli&lt;br /&gt;altri sali da cucina; infatti, contiene più magnesio, più potassio&lt;br /&gt;e una quantità minore di cloruro di sodio. Il procedimento prevede l'estrazione del sale&lt;br /&gt;dall'acqua dello stretto di Menai nel Galles, che viene più volte&lt;br /&gt;filtrata tramite processi naturali, poi riscaldata e fatta evaporare&lt;br /&gt;concentrando il sale, che successivamente viene deposto in&lt;br /&gt;bacini di cristallizzazione nei quali si vanno a formare i caratteristici&lt;br /&gt;fiocchi. I vari passaggi, tutti naturali, danno al sale di&lt;br /&gt;Halen Môn un colore bianco neve, croccantezza e il suo sapore&lt;br /&gt;inconfondibile.
